Juclas is at the forefront of selective membrane technology, and their newest addition is the Mastermind Remove range of gentle, direct contact alcohol removal plants.

In the search for perfect balance, even a 0.1% alcohol reduction can have a significant impact on the palate. "Sweetspotting" wines can now be easily achieved by both small and large producers, with Mastermind Remove units suited to batch sizes down to a couple of hundred litres or up to hundreds of thousands.

Strip water and inert gas use with the Juclas system is minimised by circulating with a fixed volume, rather than a total loss water stream commonly used in perstraction systems in Australia.

The Mastermind Remove 10 will transfer around 10L per hour of ethanol from the wine circuit to the parrallel strip water circuit making it suitable for small to medium sized batches.

For larger scale operations, the MMR50 and MMR100 will remove around 50 and 100L of ethanol per hour respectively.

Actual rates of removal will be faster where the starting alcohol percentage is higher, or the wine temperature is warmer.
